Playing the piano by ear is not magic, even though it might look that way.
It's simply 3 things combined:
1. Your memory of a tune (tonal memory);
2. Your perception of the contour (ups and downs that occur in the sheet music) of that tune;
3. Your ability to harmonize that tune (add the right chords to the tune -- and you can use "guitar chords" to help you):
4. Your stylization of that tune (use some "style" in the chords -- such as "stride", "boogie", "Christian music", "blues", etc.).
